Annabel Karmel chicken satayUnless you are allergic to peanuts you can eat peanuts and indeed any nuts when you are pregnant.

Peanut butter is a nutrient dense and energy giving food, providing an excellent source of protein, folic acid, calcium and zinc.

Zinc plays an important role in building up a strong immune system.

 

 

Chicken satay recipe

Ingredients

  • 2 garlic cloves
  • 1 tbsp chopped root ginger
  • 3 tbsp peanut butter
  • 2 tbsp cider vinegar or rice wine vinegar
  • 3 tbsp soy sauce
  • 3 tbsp dark brown sugar
  • 1 small chilli de-seeded
  • 3 tbsp lime juice
  • 1 tbsp ground nut oil
  • 1 small shallot
  • Salt and pepper
  • 2 chicken breasts cut into strips and threaded onto soaked skewers
  • Sweet chilli sauce (to serve, optional)

Instructions

  1. Put all the ingredients except the groundnut oil and chicken into an electric hand blender and blend until smooth.
  2. Cut the chicken into strips and allow to marinate in the sauce from 30 minutes to 3 to 4 hours. The longer the better.
  3. When ready heat the ground nut oil in a hot pan and add the chicken until it is cooked through and the surface caramelised.
  4. Alternatively the chicken can be put onto skewers and then grilled or barbecued.
  5. Serve with dipping sauces like sweet chilli sauce.
