Unless you are allergic to peanuts you can eat peanuts and indeed any nuts when you are pregnant.
Peanut butter is a nutrient dense and energy giving food, providing an excellent source of protein, folic acid, calcium and zinc.
Zinc plays an important role in building up a strong immune system.
Chicken satay recipe
Ingredients
- 2 garlic cloves
- 1 tbsp chopped root ginger
- 3 tbsp peanut butter
- 2 tbsp cider vinegar or rice wine vinegar
- 3 tbsp soy sauce
- 3 tbsp dark brown sugar
- 1 small chilli de-seeded
- 3 tbsp lime juice
- 1 tbsp ground nut oil
- 1 small shallot
- Salt and pepper
- 2 chicken breasts cut into strips and threaded onto soaked skewers
- Sweet chilli sauce (to serve, optional)
Instructions
- Put all the ingredients except the groundnut oil and chicken into an electric hand blender and blend until smooth.
- Cut the chicken into strips and allow to marinate in the sauce from 30 minutes to 3 to 4 hours. The longer the better.
- When ready heat the ground nut oil in a hot pan and add the chicken until it is cooked through and the surface caramelised.
- Alternatively the chicken can be put onto skewers and then grilled or barbecued.
- Serve with dipping sauces like sweet chilli sauce.
