Eggs are not only packed full of nutrition but they are tasty, they are cheap and they are extremely versatile when cooking.

One of my all-time favourite egg recipes is a Spanish omelette – complete with potato, ham and red peppers.

The kids will probably love it too.

Spanish Potato Omelette

Ingredients

  • 3 medium sized potatoes
  • 1/2 a cup of lean chopped up ham
  • 1 large red onion
  • 2 garlic cloves
  • 2 large red peppers
  • 6 eggs
  • 3 tbsp. oil or cooking spray to save on calories
  • Salt and pepper
  • ½ tsp. dried red chilli flakes
  • Small handful freshly chopped parsley

Directions

  1. Preheat the oven to 180C. Thickly slice the onion. Peel and thinly slice the potatoes. Mince the garlic cloves. Slice the peppers in half and remove the seeds and pith, then dice the flesh.
  2. Heat 2 tbsp. oil in a large frying pan and add the onion, ham and potatoes. Fry for 20 minutes over a medium heat until the potatoes are tender. Turn the potatoes frequently using tongs.
  3. For the last 5 minutes of cooking, add the garlic and peppers to the pan. Tip all ingredients into a large bowl and leave to cool slightly. Beat the eggs with the chilli, salt and pepper and parsley then pour over the potatoes. Leave to sit for 5 minutes.
  4. Pour the mixture into a 20cm square tin and place into the oven. Bake for 15-20 minutes until the eggs are set.

Recipe serves 6, calories per serving: 127, fat per serving: 13g.
