On those cold nights, all we ever want is a hearty meal that tastes amazing and warms you up from the inside out. We’ve got just the thing! One of our friendly neighbourhood Bubhubbers came up with a recipe for meatloaf with homemade BBQ sauce that will surely hit the spot. Check it out!

Meatloaf with BBQ sauce recipe

Ingredients

  • 500g of sausage mince
  • 500g of mince
  • 2 slices of bread (wholemeal is fine)
  • 2 onions, finely chopped
  • 2 tsp of curry powder
  • 1 tbs of chopped parsley
  • 1 egg
  • 1/2 a cup of milk
  • 1/2 a cup of water
  • Salt and pepper to taste
  • For the Sauce
  • 1/2 a cup of water
  • 1/2 a cup of tomato sauce
  • 1/4 of a cup of brown sugar
  • 30g of butter
  • 1/4 of a cup of Worcestershire sauce
  • 2 tbs of vinegar
  • 1 tsp of instant coffee
  • 2 tsp of lemon juice

Instructions

  1. Soak the bread in the milk and water until soggy.
  2. Combine remaining ingredients thoroughly.
  3. Shape in a “loaf” shape in a roasting pan.
  4. Bake in a moderate oven for 30 minutes.
  5. Drain off the excess fat.
  6. Pour your homemade BBQ sauce over the meatloaf.
  7. Baste regularly while cooking for a further 45 minutes.
  8. Slice it up and enjoy!
  9. For the Sauce
  10. Combine all the ingredients in a saucepan.
  11. Bring to boil.
  12. Simmer until thickened.

That’s just the basic meatloaf recipe – you can add all sorts of veggies too to make it that much tastier! Try it out and keep warm on the coming Winter nights, and be sure to test it out before Winter too, just to make sure that it really does taste great. Who am I kidding, of course it does!
